Easy Homemade Cranberry Sauce

Make this super easy recipe the day before and chill overnight.  This recipe serves 10 – 12 but can be cut in half for smaller gatherings.

 

Ingredients:

2 12 oz. packages fresh cranberries

2 – 3 cups sugar

1½ cups orange juice + drained pineapple liquid

2 TBSP lemon juice

2 16 oz. cans crushed pineapple in juice (drain and reserve the liquid)

2 cups raisins

 

Preparation:

  1. Combine sugar, orange juice, lemon juice and reserved pineapple liquid in large saucepan over medium-low heat, stirring to dissolve sugar.
  2. Add berries and raisins – and cook until cranberries are popped (5 – 7 minutes).  Remove from heat and carefully mash berries (they’ll be hot) with the back of a wooden spoon or a potato masher.
  3.  Cool 5 minutes.
  4.  Add pineapple and orange peel.
  5. Cover and refrigerate.
